Eggs are not just for the weekend! It is so important that we all eat healthy breakfasts that fuel our bodies during the week. Cue Weekday eggs! Weekday eggs are quick and easy to cook and an excellent source of protein. You see, each and every large egg contains 6 grams of protein and also boasts 14 essential nutrients. Packed with Vitamins A, D, E, Folate, Iron and Zinc, eggs are one of the few foods to be considered a complete protein because they contain all essential amino acids. This means if you start your morning off with eggs, you are giving your body the fuel it needs to thrive over the course of a busy day. 

I make sure to start my busy day off with Weekday eggs every single day! It doesn’t take more than 5 mins for me to make these recipes. Breakfast during the week can be as simple as scrambling or frying up some eggs. The weekday egg is little prep with big payoff.

Weekday Eggs 

Egg Omellete Sandwich 

This recipe might seem boring and straight forward but by adding spinach, tomato, cheese and toasted garlic toast, you have an easy and delicious breakfast that you can even eat on the go. 

Ingredients

  • 2 Large Eggs, Scrambled 
  • 1/2 C. Baby Spinach
  • 2 Slices of Store Bought Texas Garlic Toast, toasted
  • 1 Slice Cheddar Cheese
  • 3 Slices Tomato
  • Salt and Pepper

Directions 

  1. In a small non-stick frying pan over medium heat, pour the eggs in and cover. 
  2. Cook over medium heat until eggs are almost cooked through about 2 mins, flip over and cook for another 2 mins and top with cheese to melt. 
  3. Toast Garlic toast and assemble the sandwich. 
  4. Eat Eggs on a Weekday like a boss.

Quick and Easy Spinach Scramble

Ingredients

  • 2 Large Eggs, Scrambled 
  • 1/2 C. Baby Spinach, chopped
  • 1 large green onion, sliced
  • 1 Tomato, Chopped 
  • Pepper
  • 1 tbsp butter

Directions

  1. Whisk eggs and pepper in small bowl. Melt butter in non-stick skillet over medium heat.
  2. Pour in egg mixture, add in tomato, onion and spinach and reduce heat to medium-low. As eggs begin to set, gently move spatula across bottom and side of skillet to form large, soft curds.
  3. Cook until eggs are thickened and no visible liquid egg remains, but the eggs are not dry.
  4. Top with your favourite cheese (optional) 

*As a more portable to go option we like to put the finished scrambled eggs into a whole wheat Tortilla!*

    I love eating eggs during the week and I save the pancakes and waffles for the weekend. The egg omelette sandwich looks delicious.

    Your egg ideas look delicious. I like the thought of spinach in the eggs. I used to have flopped egg sanwitches with mustard but otherwise I haven’t had another egg sandwich unless it was egg salad. Love your ideas.
