Recipes for Busy Parents- What’s For Dinner Wednesday
Recipes for busy parents are crucial, especially mid week. I hate the mid week meal rut. I never know what to make! I always get stuck trying to figure out what in the world I am going to make for my family. Maybe it’s just that mid week I get flustered, maybe it’s because mid week I do not want to cook what I had put on the week’s meal plan, maybe it’s because I am a nut case. Whatever, the case is… I am happy to welcome you to “What’s for Dinner Wednesday!”
This week I am going to try something simple, yet tasty and healthy. Let’s get started shall we?
Chicken Fajita Quesadillas
What You Need:
Leftover Chicken, Shredded or 2 Chicken Breasts cooked until done and shredded,
1/2 Med. Onion, Sliced Thin
1/2 Red/Green Pepper, Sliced into Strips
2 Tbsp Vegetable Oil
6 6 Inch Tortillas
3/4 c. Shredded Monterey Jack Cheese
1 Tomato, Diced
1 Tbsp Fresh Cilantro, Chopped
What You Do:
1. In a large skillet, cook the pepper and the onion in oil until tender.
2. In a slightly oiled pan, place one tortilla, add some pepper mixture, some shredded chicken, some cheese and some tomatoes, add some more cheese, top with cilantro and then another tortilla. Cook until cheese has melted and tortilla is crispy and golden.
3. Cut into Fours and serve with Sour Cream and Salsa.
We love to have these with a nice garden salad!
