This week I have decided to go with something that is not only super easy, but insanely tasty and ready on the go.

I love slow cooker meals! Stick them on in the morning and they are ready to eat at dinner time, without any fuss or over thinking. What a great way to have an amazing dinner ready at the end of the day!

Tonight’s “What’s for Dinner Wednesday” is…. 

Pineapple Chicken, Taking it Slow

Sauce:

1/4 C. Chicken Broth
2 Tbsp Soy Sauce
2 Tbsp Ketchup
1 Tbsp Corn Starch
2 Tbsp Rice Vinegar
2 Tbsp Pineapple Jam
2 Tbsp Brown Sugar

Chicken:

2 Tbsp Olive Oil
2 Lbs Boneless Skinless Chicken Breasts, Cut into strips
2 Cups of Chopped Fresh Pineapple, Cubed
4 Green Onions Sliced Thin
2 Garlic Cloves, Chopped
1 Seeded and Chopped, Red Pepper
2 Cups Sugar Snap Peas, halved

Directions:

1. Stir together and dissolve the cornstarch and broth, set mixture aside.
2. Brown chicken in a skillet using oil, seasoning as you go and place into slow cooker.
3. Using the same skillet brown the onions and pineapple and transfer to slow cooker. Add the remaining ingredients and cook on low for 6-8 hours.

  Serve this on a bed of rice, It’s fantastic!
