Not only are these Peanut Butter Macaroon Cookies amazing, they are really so easy that it’s hard to justify NOT making them. Dive into your kitchen today and try them out!
1 cup creamy peanut butter
1 cup white sugar
1 teaspoon vanilla extract
1 box of “Macaroon” Chocolates
Preheat the oven to 350 degrees F. Grease a large baking sheet.
In a mixing bowl, combine all ingredients (except Macaroons), and stir well with a spoon. Roll the dough into 1/2 in rounds. Place the balls on the prepared baking sheet. With a fork, dipped in sugar, press a crisscross design on each cookie. Bake for 5 minutes, remove from the oven place 1 macaroon chocolate into the center of each cookie, making sure not to press them in too hard. Place back in the oven and bake for an additional 5 minuets. Let cook on rack.
These are especially good eaten still slightly warm. If saving heat in microwave to melt chocolate a bit prior to enjoying.
Put these on ice cream for an even more exciting, creamy treat. We like to warm them up a bit first. So good they fall apart into the creamy ice cream! I’ll be willing to bet you make these over and over again. I know I do.
