This Buttery Butter Cookies Recipe is a family favorite around the holidays and for no reason! It’s easy and tasty and totally worth the calories.
1 cup of unsalted butter
3/4 cup of sugar
1 1/2 teaspoons vanilla extract
1 large egg yolk (Discard white)
2 1/4 cups of flour
Mix the first 4 ingredients together until they have reached a smooth and creamy consistency. Mix in the egg yolk until well blended. Gently add the flour and mix lightly, do not over mix
Remove doughy mixture from the bowl and place on a lightly floured surface and knead until smooth
Roll dough into a log shape, cover with plastic wrap and refrigerate for approx. 2 hours.
You can use this dough to do many things. Roll it out to cut shapes into using a rolling pin, or just slice off the log and place on a sheet. Preheat oven to 325 degrees, slice or roll out to 1/8 of an inch thick, place on cookie sheet and bake for approx 16 minuets.
I personally like to cut these into fun shapes, the kids really like that part so I usually give them some cookie cutters and let them go wild. What a great way to have a treat to enjoy and spend time with your family!
