Best Ever Creamy Coleslaw Recipe

I love Coleslaw! I am lucky enough to have perfected what I would like to think is the best ever creamy coleslaw recipe. I mean, I think it is! I love it. Not only is it simple, but it’s just delicious. 

Coleslaw signifies summer to me, I do not know why! It just DOES. It reminds me of BBQ’s and huge loaded plates full of delicious food. It reminds me of the sun, and playing in the backyard. It reminds me of warmth.

If only this recipe could bring summer, because let’s be completely honest here.. I am sick of this winter already. Unfortunately this recipe does NOT bring summer any quicker. 

This Recipe is an amazing on top of my Best Ever Slow Cooker Pulled Pork Recipe! I love it on top of pulled pork, beside pulled pork, behind pulled pork… I think you get the jist of it.

Doesn’t that look PHENOMENAL? I do not think I could EVER eat pulled pork again without Coleslaw! I really don’t.

Even the kids love this recipe, and hubby goes nuts for it too! I have served it a few times with different meals as a side dish and have gotten quite a few compliments on it. It’s quite a good addition to any meal! 

The mix of cabbage, carrots and onion gives this recipe the perfect crunch! But the best part is the coleslaw dressing! To me the dressing has to be the right balance between sweet and tangy, and with this recipe I have found the perfect balance for myself and stick with it. Sometimes I use red cabbage and green cabbage sometimes just green. If I am going to use both I change the recipe to half and half!

Ingredients
  1. 4.5 Cups Green Cabbage, Shredded (Or 1.5 Cup Red, 3 Cups Green)
  2. 3/4 Cup Carrots, Shredded
  3. 3/4 Cup Mayo
  4. 2 Tbsp White Vinegar
  5. 2 Tbsp Sour Cream
  6. 3 Tbsp Regular Sugar
  7. 2 Tbsp Onion, Grated
  8. 1/2 teaspoon Celery Seeds
Instructions
  1. Add Cabbage, Carrots and Onion to bowl.
  2. In a separate bowl mix all the remaining ingredients together.
  3. Pour over Cabbage mixture and toss until well distributed.
  4. Cover with Plastic Wrap and refrigerate for at least one hour.

    I doubled this recipe…except for vinegar. I only used 3 Tbs. I also used a little more onion. Very good recipe and will use it again.
