I love to provide my Little Man with amazingly tasty, healthy lunches that he will enjoy, and in order to do that I like to “Pre-Plan.” I do a lot of lunch planning in advance, prepackaging, organizing and freezing my own items.
Healthy Back To School Lunch Ideas Made Easy
Fruit Cups
Firstly, I make and assemble my own fruit cups using any small containers I have around the house. I used to use the tiny resealable baby food containers but now that I do not have those anymore I have some plastic food storage containers that are just the right size. I spend a few minuets chopping, washing and delegating where the fruits go into at least a weeks worth of containers. Sometimes I will use frozen fruits such as raspberries and blueberries and put them in the storage containers in the freezer and take them out the morning of, that way by lunch time they are thawed and ready to enjoy and they also help to double as an ice pack to keep the rest of the stuff cold.
Veggies & Dip
For The veggies and dip I use more small containers for the dip, and then chop up and wash at least a weeks worth of carrots, celery and broccoli and put them in plastic baggies. I have a specific crisper in my refrigerator designated for the pre-made lunch stuff like the pre-assembled fruits and veggies.
Treats
When it comes to school treats I like to keep them as low in sugar as I possibly can in order to keep them healthy and then separate them into packages and freeze the rest. Little Man Loves my Oatmeal chocolate chip cookies and so do I. I always make a big batch and freeze 1/2 and separate and put some in baggies for the weeks lunch.
Healthy Oatmeal Chocolate Chip Cookies
Ingredients
2/3 cup raisins
1/2 cup white whole wheat flour
3 tbsp brown sugar
pinch of salt
1 tsp baking powder
1 tsp cinnamon
1/4 teaspoon nutmeg
1 large egg
1 1/2 tsp vanilla extract
1/3 cup butter, melted
1/3 cup coconut oil, melted
2 cups of Oats (Quick or Rolled is fine)
1/4 cup milk chocolate chips
Main Course
FREEZE YOUR SANDWICHES! No, seriously. Freeze them! Make them ahead of time and freeze them in their plastic wrap. I simply slice up some cheese, take some whole grain bread and then slap some mustard on both pieces of bread, add a meat of my choice (usually turkey or chicken), add some cheese, close the sandwich, wrap those suckers in plastic wrap and slap em in the freezer. By the time Little Man goes to eat lunch, his sandwich has thawed and voila. I can make about 15 of those sandwiches in a sitting and then not worry about them for a while.
