This week we are doing a yummy twist on one of our family favorites! We love the combination of Chicken and Broccoli as well as the fun, comfort and ease of a casserole! This Wednesday, we are putting all those things together for the ease of a Stove top Casserole! Yay! AND It’s healthier than the usual casserole I was making!
Broccoli & Chicken Casserole STOVE TOP!
What You Need:
1 3/4 C. Chicken Broth (Reduced Sodium)
1 C. Whole Wheat Egg Noodles
1 Lb of Boneless Skinless Chicken Breast, cubed
2 C. Broccoli, Chopped
1 1/4 C. Skim Milk
1/4 C. Low Fat Mayonnaise
2 Tbsp Flour
1 Tsp Dry Mustard
3/4 Tsp Garlic Powder
Pinch of Salt and Pepper
1 1/2 C. Cheddar Cheese
What To Do:
In a large skillet combine noodles, broth, Chicken and Broccoli.
In a large bowl, whisk together the Mayo, Milk, Flour, Dry Mustard, Garlic Powder, and Salt and Pepper. Pour over the ingredients in the Skillet.
Simmer over medium heat and bring to a boil, reduce heat and cover. Stirring occasionally. Simmer until noodles and chicken are fully cooked.
Sprinkle with Cheese and cook until melted.
We serve this with a lovely side salad!
