I am super excited about dinner tonight. Mostly because I love eating! YUM. Anyways, tonight I have decided to go comfort food. It has gotten a little chilly at nights here and I wanted to do something traditional… so, I am about to disclose my recipe for noodle and cheese casserole… it may sound boring because, I mean, who doesn’t know how to make that?! But seriously… this makes my family SO happy… and I have always refused to share before….

Ninja’s Noodle & Cheese Casserole

What Ya Need

  • 4 cups Pasta of any kind (We like to use Fusili)
  • 1/3 of a cup butter (Yeah BUTTER NOT MARGARINE)
  • 1/3 of a cup of flour
  • 4-1/2 cups of 18 Percent Cream (I never said this was low Cal or low fat)
  • 4 cups of shredded old Cheddar cheese (NOM NOM NOM)
  • 1-1/2 tsp of dry mustard
  • 1/2 a tsp of salt
  • 1/2 tsp of black pepper
  • 1/4 tsp of ground nutmeg
  • 1 cup of full fat sour cream (FULL FAT)

Topping

  • 2 cups  of Italian Seasoned bread crumbs
  • 1 cup of shredded old Cheddar cheese
  • 1/2 cup of shredded Mozzarella
  • 3 tbsp of melted butter

What To Do:

Preheat oven to 350°F (180°C)

In a large pot of boiling salted water, cook the noodles until they are tender but still slightly firm, usually takes about 8 minutes and then drain.

Meanwhile, in large heavy saucepan, melt the butter over medium heat; add the flour and cook, stirring, for about 3 minutes. Make sure to gradually whisk in the cream and simmer and whisk until thickened which usually takes about 8 minutes.

Add the cheese, mustard, salt, pepper, and nutmeg; stir until the cheese has melted. Stir in the sour cream then the noodles; spread in a 13 by 9 inch baking dish.

To Make Topping: In a bowl, toss together the bread crumbs, cheese and butter and then sprinkle over the noodles.

Place in the oven and bake until it’s golden brown and bubbly which usually takes about 42 minutes.

 

This is a great meal, anytime. Hubby especially loves it after a hard work day.
