This is a great Apple Pie Recipe for any day or time you just want some PIE!
2 Pie Crusts (Frozen or Homemade)
8 cups Sliced and Peeled Apples
2 Tablespoons Fresh Lemon Juice
3/4 cup white sugar
1/4 cup brown sugar
1/4 cup flour
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 Tbsp of unsalted butter
1 egg yolk (Discard whites)
1 Tbsp of milk
Preheat oven to 425
In a bowl mix the apple slices with the fresh lemon juice. Combine the sugar, brown sugar, cinnamon and nutmeg then add to the apples and mix well to coat. Fill the pie pastry with apple mix and dot with the butter. Place a second crust on top and cut slits to vent. Seal the edges.
Beat egg yolk and milk and brush mix over crust top. Place in oven and bake for 15 minuets. Reduce the heat to 350 and bake for 45 minuets.
You can also make these into mini tarts using frozen mini tart shells and cutting the apples into smaller slices. Bake for same time and temp.
This pie is amazing served with some Ice Cream, or homemade whipped cream. My kids loved it fresh, and also warmed up slightly.
